Pete, was more than just a colleague – he was a friend and an exceptional chef. Our friendship began in 1988 when we started working together in my restaurants, a professional partnership that lasted until 2003. However, our bond extended far beyond the kitchen. Peter's culinary skills were unparalleled; he was undoubtedly the most talented chef I have ever had the privilege of working alongside. His passion for food was matched only by his love for football, particularly his beloved Brighton & Hove Albion. Our shared enthusiasm for the sport led to countless animated discussions and a particularly memorable outings to an England match, where we cheered on the national team together. After work, we often found ourselves enjoying a drink at the back of Paris Texas, using those moments to unwind talking about the day's service or the latest football results. Peter's sudden departure has left a void that will be hard to fill. His skill in the kitchen, his warm companionship, and his infectious passion for football will be sorely missed. He wasn't just a colleague or a drinking buddy – he was a true friend whose memory will be cherished. Rest in peace, Peter. The kitchen won't be the same without you, and neither will those football nights. You'll be fondly remembered and greatly missed.
